• Tzatziki cupping
• Move pastry containers from Main Hall to Riverside
• Set-up Riverside pastry packing area
Monday June 23
• Pre-packing of pastries (9:30am)
• Ensure deliveries are unloaded and stored in proper areas
• Start arranging inside Main Hall
• Prelim Set-up Riverside
Tuesday June 24
• Pre-packing of pastries (9:30am)
• Ensure deliveries are unloaded and stored in proper areas
• Prelim set-up Gyro, Ice Cream, Honeyballs and Bar area
Wednesday June 25
• Pre-packing of pastries (9:30am)
• Ensure deliveries are unloaded and stored in proper areas
• Unload and store grocery supplies and move product to necessary areas
• Start set-up Main Hall packaging and food packing areas with supplies
• Final set-up Gyros, Ice Cream, Honeyballs and Bar areas
• Final set-up Riverside
• Final set-up Main Hall
• Start electrical for Clover POS equipment
• Start configuring TV monitors for scrolling ads, run power cords as needed
• Start loading coolers with soft drinks
• Prepare and cup Rice Pudding
• Pack Grape Leaves
Thursday June 26
• Pre-packing of pastries (9:30am)
• Ensure deliveries are unloaded and stored in proper areas
• Finish set-up Main Hall packaging and food packing areas with supplies
• Set-up Gyro, Ice Cream, Honeyballs, Bar areas with supplies
• Finish electrical for Clover POS equipment
• Finish configuring TV monitors for scrolling ads, run power cords as needed
• Finish loading coolers with soft drinks
• Hang signs all areas
• Prepare Tomato Sauce for souzoukakia and green beans
• General walk-thru and final inspections
